Ingredients

  • 1 cup cooked and mashed sweet potatoes

  • 1 cup granulated sugar

  • 2.5 oz evaporated milk (approx. 1/4 cup + 1 tbsp)

  • 1/2 teaspoon vanilla extract

  • 1 1/2 eggs, beaten (use one whole egg and half of another)

  • 3/4 teaspoon ground cinnamon

  • 1 shallow 9-inch pie shell (unbaked) or half of a deep-dish shell


Instructions

Step 1: Preheat the Oven

  • Set oven to 350°F (175°C).

Step 2: Make the Filling

  • In a large bowl, combine:

    • Softened butter

    • Mashed sweet potatoes

    • Granulated sugar

    • Evaporated milk

  • Mix until smooth using a hand mixer or whisk.

Step 3: Add Flavor and Eggs

  • Stir in:

    • Vanilla extract

    • Beaten eggs

    • Cinnamon

  • Mix until fully incorporated and smooth.

Step 4: Fill the Crust

  • Pour the mixture into the unbaked pie shell, smoothing the top with a spatula.

Step 5: Bake

  • Bake for approximately 1 hour, or until the center is set and a knife comes out clean from the center.
