This Taco Pasta Salad combines the best of tacos and pasta salad in one bold, flavor-packed dish. With seasoned beef, crisp veggies, cheese, and zesty French dressing, it’s perfect for potlucks or easy dinners—topped with crunchy nacho chips for the perfect finish!
Ingredients

16 oz rotini pasta (or any medium pasta like penne or bowties)

1 lb lean ground beef

3 tablespoons taco seasoning

1.5 cups chopped tomatoes

1 cup diced green bell pepper

2 to 3 cups Mexican-style shredded cheese

4 cups shredded iceberg or romaine lettuce

15 oz French dressing (bottled or homemade)

3 cups nacho cheese or tortilla chips, slightly crushed

Optional: chopped fresh cilantro for garnish
Instructions
Boil a large pot of salted water and cook pasta according to package instructions. Drain and let cool completely.
In a skillet over medium heat, cook ground beef until browned. Drain any excess grease. Stir in taco seasoning and let cool.
In a large mixing bowl, add the cooled pasta, cooked beef, tomatoes, bell peppers, cheese, and lettuce.
Pour in the French dressing and toss the salad until all ingredients are evenly coated.
Just before serving, stir in the crushed nacho cheese or tortilla chips for the perfect crunch.
Top with chopped cilantro, if desired, and serve immediately.
