- 2 cups elbow macaroni, uncooked
- 1 cup mayonnaise
- 1/2 cup finely chopped celery
- 1/3 cup finely chopped carrot
- 1 hard-boiled egg, chopped
- 1/4 cup finely minced onion (or dehydrated onion)
- 2 tbsp sweet relish
- 3/4 tsp dry ground mustard
- 1/4 tsp salt
- 1/8 tsp ground black pepper
- Dash of paprika
- 3 quarts water
- 1 1/2 tsp salt
Instructions
1. Cook the Macaroni:
- In a large pot, bring 3 quarts of water and 1 1/2 tsp salt to a rolling boil.
- Gradually add elbow macaroni and cook uncovered for 6-8 minutes until al dente.
- Drain and rinse with cold water, then drain again completely.
2. Prepare the Dressing:
- In a medium mixing bowl, whisk together mayonnaise, celery, carrot, chopped egg, onion, sweet relish, mustard, salt, pepper, and paprika.
3. Assemble the Salad:
- Add the cooked macaroni to the dressing mixture.
- Gently toss until all ingredients are evenly coated.
4. Chill & Serve:
- Cover and refrigerate for at least 1 hour to allow flavors to meld.
- Serve chilled and enjoy!
