Ingredients

  • 2 cups elbow macaroni, uncooked
  • 1 cup mayonnaise
  • 1/2 cup finely chopped celery
  • 1/3 cup finely chopped carrot
  • 1 hard-boiled egg, chopped
  • 1/4 cup finely minced onion (or dehydrated onion)
  • 2 tbsp sweet relish
  • 3/4 tsp dry ground mustard
  • 1/4 tsp salt
  • 1/8 tsp ground black pepper
  • Dash of paprika
  • 3 quarts water
  • 1 1/2 tsp salt

Instructions

1. Cook the Macaroni:

  • In a large pot, bring 3 quarts of water and 1 1/2 tsp salt to a rolling boil.
  • Gradually add elbow macaroni and cook uncovered for 6-8 minutes until al dente.
  • Drain and rinse with cold water, then drain again completely.

2. Prepare the Dressing:

  • In a medium mixing bowl, whisk together mayonnaise, celery, carrot, chopped egg, onion, sweet relish, mustard, salt, pepper, and paprika.

3. Assemble the Salad:

  • Add the cooked macaroni to the dressing mixture.
  • Gently toss until all ingredients are evenly coated.

4. Chill & Serve:

  • Cover and refrigerate for at least 1 hour to allow flavors to meld.
  • Serve chilled and enjoy!
