  • 2 cups cooked chicken (shredded or diced)
  • 3 cups dry spaghetti, broken into 2-inch pieces
  • 2 cans (10.5 oz each) cream of mushroom soup
  • 2 cups grated sharp cheddar cheese
  • 1/4 cup finely diced green pepper
  • 1/4 cup finely diced onion
  • 1 jar (4 oz) diced pimentos, drained
  • 2 cups reserved chicken broth (from cooking the chicken)
  • 1 tsp Lawry’s Seasoned Salt
  • 1/8 to 1/4 tsp cayenne pepper (adjust to taste)
  • Salt and black pepper, to taste
  • 1 cup additional grated sharp cheddar cheese (for topping)

Instructions

  • Cook the Chicken: Start by cooking a cut-up fryer in a pot of water until tender. Reserve 2 cups of the chicken broth and shred or dice the chicken to make 2 cups.
  • Prepare the Spaghetti: In the same pot of reserved chicken broth, cook the spaghetti until al dente. Avoid overcooking.
  • Combine Ingredients: In a large mixing bowl, combine the cooked spaghetti, chicken, cream of mushroom soup, 2 cups of cheddar cheese, green pepper, onion, pimentos, seasoned salt, cayenne pepper, salt, and black pepper. Mix well.
  • Assemble the Casserole: Transfer the mixture to a greased casserole dish. Sprinkle the remaining 1 cup of cheddar cheese evenly over the top.
  • Bake or Store: Cover the dish with foil and bake at 350°F for 45 minutes, or until bubbly. If the cheese starts to brown too quickly, cover it with foil. Alternatively, you can refrigerate the dish for up to 2 days or freeze it for up to 6 months before baking.
