-
2 teaspoons espresso powder or instant coffee

125 g cat tongue cookies or ladyfingers, finely crushed (about 1 ½ cups)
-
200 g mascarpone cheese (about 7 oz)
-
15 g powdered sugar (about 1 tablespoon)
-
½ teaspoon pure vanilla extract
-
1 tablespoon coffee liqueur (optional, e.g., Kahlúa or Tia Maria)
-
Cocoa powder or grated chocolate, for coating
Instructions
Step 1: Prepare the Cookie Crumbs
-
Use a food processor to crush the cookies into fine crumbs.

No processor? Place cookies in a zip-top bag and crush with a rolling pin until powdery.

-
In a bowl, combine mascarpone, powdered sugar, vanilla extract, and coffee powder.
-
Mix until smooth and creamy.
-
Stir in the cookie crumbs until fully incorporated.

If using coffee liqueur, add now and mix again. The mixture should be soft but moldable.
Step 3: Roll into Balls
-
Scoop out small portions (about 1 tablespoon each) and roll between your palms to form smooth balls.
-
Place them on a tray lined with parchment paper.
