Instructions
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. In a large bowl, cream the butter and sugar until fluffy. Mix in the egg and vanilla extract. Gradually add the flour, baking soda, and salt, mixing until a soft dough forms.
Scoop about 2 tablespoons of dough per cookie, roll into balls, and flatten slightly. Place on the prepared sheet, spaced 2 inches apart. Bake for 10–12 minutes or until the edges are lightly golden. Cool completely on the baking sheet.
In a small saucepan, melt the butter over medium heat. Add brown sugar, heavy cream, and vanilla. Stir constantly until slightly thickened, about 3–5 minutes. Remove from heat and let cool for a few minutes.
Spoon the warm caramel over each cooled cookie. Allow it to set for 10–15 minutes before proceeding to the next step.
In a microwave-safe bowl, combine chocolate chips and butter. Microwave in 20-second intervals, stirring between each, until fully melted and smooth. Spoon or drizzle the melted chocolate over the caramel layer on each cookie.
Allow cookies to sit at room temperature or chill in the refrigerator until the chocolate hardens completely. Serve once fully set.
