Ingredients

Scale

For the Shortcake:

  • 2 cups all-purpose flour (for structure)
  • 1/4 cup granulated sugar (adds sweetness)
  • 1 tbsp baking powder (helps the cake rise)
  • 1/2 tsp salt (balances the sweetness)
  • 1/2 cup cold butter, cubed (for richness and flakiness)
  • 1 cup heavy cream (adds moisture and tenderness)
  • 1 tsp vanilla extract (enhances the flavor)

For the Strawberry Filling:

  • 1 lb fresh strawberries, sliced (for juicy, fruity layers)
  • 1/4 cup granulated sugar (sweetens the strawberries)
  • 1 tbsp lemon juice (adds brightness and enhances flavor)

For the Whipped Cream:

  • 1 1/2 cups heavy whipping cream (for a light, fluffy topping)
  • 1/4 cup powdered sugar (sweetens the cream)
  • 1 tsp vanilla extract (adds flavor)

Instructions

  1. Prepare the Strawberries:
    • In a medium bowl, combine the sliced strawberries, sugar, and lemon juice.
    • Let the mixture sit for 15-20 minutes to macerate, allowing the strawberries to release their juices.
  2. Make the Shortcake:
    • Preheat your oven to 375°F (190°C) and grease an 8-inch cake pan.
    • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
    • Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
    • Add the heavy cream and vanilla extract, stirring until the dough comes together.
    • Press the dough evenly into the prepared cake pan.
    • Bake for 18-20 minutes, or until the shortcake is golden brown.
    • Let the cake cool completely before slicing it in half horizontally.
  3. Make the Whipped Cream:
    • In a large bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract on high speed until stiff peaks form.
  4. Assemble the Shortcake:
    • Place the bottom layer of the shortcake on a serving plate.
    • Spread a layer of whipped cream over the cake, then top with half of the macerated strawberries.
    • Place the top layer of the shortcake over the strawberries.
    • Spread another layer of whipped cream on top and garnish with the remaining strawberries.
    • Drizzle with the syrup from the macerated strawberries for extra flavor.
  5. Serve:
    • Slice and serve immediately. Enjoy!

Notes
