Ingredients:
- 1 box yellow cake mix
- 1/4 cup butter
- 1 1/2 cups brown sugar
- 2 cups pecans
- Pineapple slices
- Maraschino cherries
Instructions:
- Preheat oven to 325°F (160°C).
- Prepare the cake mix according to the package instructions. If desired, double the cake mix.
- In a cast iron pan, melt the butter over medium heat.
- Stir in the brown sugar and pecans, and cook, stirring constantly, for about 4 minutes until the mixture begins to bubble and stick together.
- Turn off the heat and add the pineapple slices and maraschino cherries to the pan.
- Pour the prepared cake mix over the pineapple, cherry, and pecan mixture in the pan.
- Bake for about 37-44 minutes, or until the center of the cake is cooked through.
- Remove the cake from the oven and let it stand for 5 minutes.
- Run a knife around the outer edges of the cake, then carefully flip it onto a round cookie sheet or serving platter.
