Walking Taco Casserole

Ingredients:

  • 1 lb Ground chicken, beef, or turkey
  • 1 small onion, sliced
  • 1/2 Can of Rotel (diced tomatoes with green chilies)
  • 1 Packet of Taco seasoning
  • 1 Bag of Frito Corn Chips
  • 1 Can Black Beans, drained and rinsed
  • 1 Can Enchilada Sauce (10 oz)
  • 2 oz. Cream Cheese
  • 2 cups Shredded Cheese

Directions:

  1. In a skillet, brown the ground meat and onion.
  2. Add the Rotel and taco seasoning. Simmer until any liquid is evaporated.
  3. Stir in the black beans and cream cheese. Turn off the heat and stir until the cream cheese is melted and combined. Then, mix in the enchilada sauce.
  4. Preheat the oven to 325 degrees Fahrenheit and spray a 9×13 inch pan with cooking spray.
  5. Spread half of the Fritos on the bottom of the prepared pan. Top with half of the meat mixture and half of the shredded cheese.
  6. Repeat the layers: Fritos, meat mixture, and shredded cheese.
  7. Bake for 20 minutes, or until the cheese is melted and the casserole is heated through.
