Ingredients
-
1 ½ cups graham cracker crumbs
-
¼ cup granulated sugar
-
6 tablespoons unsalted butter, melted
-
16 oz cream cheese, softened
-
½ cup granulated sugar
-
4 large eggs, separated
-
1 cup sour cream
-
1 teaspoon vanilla extract
-
1 cup white chocolate chips, melted
-
1 cup fresh strawberries, hulled and sliced
-
1 cup whipped cream
-
Fresh sliced strawberries (for garnish)
Instructions
Step 1: Preheat the Oven
-
Preheat your oven to 325°F (165°C).
-
Lightly grease a 9-inch springform pan or line the bottom with parchment paper.
Step 2: Make the Crust
-
In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter.
-
Press the mixture evenly into the bottom of the springform pan.
-
Bake for 10 minutes, then let cool slightly while preparing the filling.
Step 3: Prepare the Cheesecake Filling
-
In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy.
-
Add the egg yolks one at a time, beating well after each addition.
-
Mix in the sour cream and vanilla extract.
Step 4: Melt the White Chocolate
-
Gently melt the white chocolate chips in a double boiler or microwave (in 20-second intervals, stirring in between) until smooth.
-
Allow it to cool slightly, then stir into the cheesecake mixture.
Step 5: Whip and Fold Egg Whites
-
In a clean bowl, beat the egg whites to stiff peaks.
-
Gently fold them into the cheesecake batter to create a light, airy texture.
Step 6: Add Strawberries and Bake
-
Fold in the sliced strawberries.
-
Pour the batter into the prepared crust.
-
Bake for 55–60 minutes, or until the center is set but still slightly jiggly.
Step 7: Cool and Chill
-
Allow the cheesecake to cool in the oven with the door slightly ajar for 1 hour (prevents cracking).
-
Transfer to the fridge and chill for at least 4 hours, preferably overnight.
Step 8: Decorate and Serve
-
Before serving, top the cheesecake with a layer of whipped cream and fresh strawberry slices.
-
Slice, serve, and savor every bite of this luxurious treat.
Notes
-
Add a teaspoon of lemon zest to brighten the flavor
-
For extra stability, wrap the pan in foil and bake in a water bath
-
