Rich, creamy, and topped with sweet strawberries and whipped cream—this cheesecake blends white chocolate decadence with fruity freshness for an irresistible dessert

Ingredients

Scale
  • 1 ½ cups graham cracker crumbs

  • ¼ cup granulated sugar

  • 6 tablespoons unsalted butter, melted

  • 16 oz cream cheese, softened

  • ½ cup granulated sugar

  • 4 large eggs, separated

  • 1 cup sour cream

  • 1 teaspoon vanilla extract

  • 1 cup white chocolate chips, melted

  • 1 cup fresh strawberries, hulled and sliced

  • 1 cup whipped cream

  • Fresh sliced strawberries (for garnish)

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 325°F (165°C).

  • Lightly grease a 9-inch springform pan or line the bottom with parchment paper.

Step 2: Make the Crust

  • In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter.

  • Press the mixture evenly into the bottom of the springform pan.

  • Bake for 10 minutes, then let cool slightly while preparing the filling.

Step 3: Prepare the Cheesecake Filling

  • In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy.

  • Add the egg yolks one at a time, beating well after each addition.

  • Mix in the sour cream and vanilla extract.

Step 4: Melt the White Chocolate

  • Gently melt the white chocolate chips in a double boiler or microwave (in 20-second intervals, stirring in between) until smooth.

  • Allow it to cool slightly, then stir into the cheesecake mixture.

Step 5: Whip and Fold Egg Whites

  • In a clean bowl, beat the egg whites to stiff peaks.

  • Gently fold them into the cheesecake batter to create a light, airy texture.

Step 6: Add Strawberries and Bake

  • Fold in the sliced strawberries.

  • Pour the batter into the prepared crust.

  • Bake for 55–60 minutes, or until the center is set but still slightly jiggly.

Step 7: Cool and Chill

  • Allow the cheesecake to cool in the oven with the door slightly ajar for 1 hour (prevents cracking).

  • Transfer to the fridge and chill for at least 4 hours, preferably overnight.

Step 8: Decorate and Serve

  • Before serving, top the cheesecake with a layer of whipped cream and fresh strawberry slices.

  • Slice, serve, and savor every bite of this luxurious treat.

Notes

  • Add a teaspoon of lemon zest to brighten the flavor

  • For extra stability, wrap the pan in foil and bake in a water bath

  • Use a serrated knife for clean slices
