Method
- Preheat your oven to 350°F (175°C).
- In a large skillet, melt the butter over medium heat. Add the finely chopped onion and minced garlic and sauté for 3–4 minutes.
- Stir in the flour and cook for 1 minute to form a roux.
- Slowly add the milk and sour cream, whisking until the sauce thickens, about 3–4 minutes.
- Stir in the grated cheese (except the reserved 1/2 cup) and allow it to melt into the sauce.
- Add the cooked chicken, pasta, red pepper flakes, salt, and black pepper. Toss until everything is fully coated.
- Transfer the mixture to a greased 9×13-inch baking dish and sprinkle the reserved cheese on top.
- Bake for 20–30 minutes, or until the casserole is bubbling and the top is golden.
- Let cool briefly before serving.
Notes
Use a mix of cheeses for deeper flavor. You can also add cooked vegetables like broccoli or peas for extra texture and nutrition.
