Corn Nuggets

Ingredients:

  • 1 (11 ounce) can creamed corn
  • 1 (11 ounce) can whole corn, drained
  • 1/2 cup yellow corn flour
  • 1/2 cup all-purpose flour
  • 1 egg white
  • 2 tablespoons milk
  • Salt and pepper to taste
  • 3 cups vegetable oil for frying

Directions:

  1. In a medium bowl, combine the creamed corn and drained whole corn kernels.
  2. Line a baking sheet with aluminum foil and coat it with vegetable oil or cooking spray. Place spoonfuls of the corn mixture on the tray and freeze for 3 hours, or until firm.
  3. Heat 1 inch of oil to 350°F (175°C) in a large deep fryer or a deep skillet, or follow the manufacturer’s instructions for your deep fryer.
  4. In a separate bowl, whisk the egg white and milk together.
  5. In another bowl, mix the yellow corn flour, all-purpose flour, salt, and pepper.
  6. Remove the frozen corn mixture from the freezer. Dip each frozen corn spoonful into the egg white mixture, then roll it in the flour mixture to coat evenly.
  7. Carefully place the coated corn fritters into the hot oil.
  8. Fry the fritters until they are golden brown, which should take about 3-5 minutes.
  9. Remove the fritters with a slotted spoon and place them on a plate lined with paper towels to drain any excess oil.
  10. Serve your crispy corn fritters while they are hot and enjoy!
