Instructions:

  1. Prepare the Chicken Wings:
    • In a large bowl, mix together the baking powder, smoked paprika, salt, and pepper.
    • Ensure that all the chicken wings are thoroughly coated with the mixture.
  2. Set Up the Rack:
    • Spray cooking oil onto a wire rack and place it over a foil-lined tray.
    • Arrange the coated chicken wings on the rack.
  3. Initial Baking:
    • Preheat your oven to 200°C (390°F).
    • Place the wire rack with the chicken wings in the preheated oven.
    • Bake for one hour, rotating the tray at the midway point to ensure even cooking.
  4. Prepare the Marinade:
    • While the chicken wings are baking, prepare the marinade.
    • In a bowl, combine peri-peri sauce, dark soy sauce, light brown sugar, runny honey, melted butter, toasted sesame oil, and finely sliced garlic.
