Copycat Taco Bell Mexican Pizza Casserole

Ingredients:

  • 1.5 lb ground beef
  • 1 packet of Taco Bell seasoning
  • 1 large can of refried beans
  • 1 large can of red enchilada sauce
  • 10 corn flour tortillas (fried individually)
  • 1 large tomato, diced
  • 1/4 medium onion, diced
  • 3+ cups shredded cheese
  • Chopped green onion
  • Vegetable oil for frying tortillas

Instructions:

  1. Brown the ground beef in a skillet over medium-high heat. Once browned, drain any excess fat.
  2. Return the cooked beef to the skillet and add the Taco Bell seasoning packet, following the directions on the packet (usually adding 1/2 to 3/4 cup of water). Simmer until most of the liquid is absorbed. Set aside.
  3. Heat the refried beans either on the stovetop or in the microwave.
  4. In a separate skillet, use a small amount of vegetable oil to fry each tortilla individually until they are lightly crispy. Drain them on paper towels.
  5. Preheat your oven to 350°F (175°C).
  6. In a casserole dish, layer the bottom with some of the fried tortillas.
  7. Spread the heated refried beans evenly over the tortilla layer.
  8. Add the seasoned ground beef on top of the beans.
  9. Pour half of the can of red enchilada sauce evenly over the beef layer.
  10. Add another layer of fried tortillas on top.
  11. Pour the remaining half of the red enchilada sauce evenly over the top layer of tortillas.
  12. Sprinkle diced tomatoes and yellow onions across the top.
  13. Spread a generous amount of shredded cheese over the entire casserole. You can choose whether to place tomatoes and onions on the bottom layer of cheese or on top of it.
  14. Bake in the preheated oven for approximately 20 minutes, or until the cheese is melted and the edges start to bubble.
  15. Garnish with chopped green onions after cooking.
  16. Let the casserole stand for 10 minutes before serving.
