Ingredients:

  • 1/2 cup peanut butter
  • 3 tablespoons soft butter
  • 1 teaspoon vanilla extract
  • 1 cup Rice Krispies cereal
  • 1/2 cup pecans, chopped
  • 1 cup shredded coconut
  • 1 package (12 ounces) chocolate chips
  • 1 ounce sweet chocolate, chopped

Directions:

  1. In a large bowl, mix together the peanut butter, soft butter, and vanilla extract until well combined.
  2. Stir in the Rice Krispies cereal, chopped pecans, and shredded coconut until evenly distributed.
  3. Refrigerate the mixture for about 30 minutes to firm up.
  4. After chilling, shape the mixture into balls using your hands and place them on a parchment-lined baking sheet.
  5. Refrigerate the balls for an additional 1 hour to set.
  6. In a double boiler, melt the chocolate chips and sweet chocolate until smooth, stirring frequently.
  7. Using a fork, dip each peanut butter ball into the melted chocolate to coat it completely.
  8. Place the chocolate-coated balls back onto the parchment paper-lined baking sheet.
  9. Once all the balls are coated, transfer the baking sheet to the freezer to allow the chocolate to set, about 20-30 minutes.
  10. Once set, transfer the peanut butter rice krispie balls to an airtight container and store them in the refrigerator until ready to serve.
