Cajun Cabbage Jambalaya 

Ingredients:

  • 16 ounces of spicy beef sausage
  • 1 onion, roughly chopped
  • 4 cloves of garlic, minced
  • 1 green bell pepper, chopped
  • 1 cup thinly sliced celery
  • 1 head of green cabbage, chopped
  • 1 can (14 ounces) of diced tomatoes
  • 1 cup of chicken broth
  • 1/2 cup of water
  • 1 cup of brown basmati rice
  • 1 tablespoon of chili powder
  • 1/2 teaspoon of salt
  • 1 teaspoon of paprika
  • 1/2 teaspoon of ground cumin
  • A pinch of cayenne pepper
  • A pinch of freshly ground black pepper

Instructions:

  1. Brown the spicy beef sausage in a large pot with chopped onion and minced garlic.
  2. Add chopped green bell pepper and celery to the pot and cook for an additional 3 minutes.
  3. Combine diced tomatoes, chicken broth, water, brown basmati rice, and all the seasonings (chili powder, salt, paprika, ground cumin, cayenne pepper, and black pepper) into the pot.
  4. Bring the mixture to a boil, then cover and reduce heat to low.
  5. Let it cook for about 40 to 50 minutes, stirring occasionally, until the rice is tender.
  6. Serve and enjoy your Cajun Cabbage Jambalaya!
