Iron Skillet Blackberry Cobbler

Ingredients:

  • 6 tablespoons Sweet Cream Butter, chilled and cut into pieces
  • 1 cup Self-Rising Flour
  • ¼ teaspoon Salt
  • ¼ teaspoon Cinnamon
  • 1 cup + 2 tablespoons White Sugar
  • 1 cup Whole Milk
  • 1 teaspoon Pure Vanilla Extract
  • 2 cups Fresh Blackberries

Instructions:

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
  2. Prepare a 9-inch cast iron skillet by spraying it with non-stick baking spray. Add the pieces of chilled butter to the skillet.
  3. Place the skillet in the preheated oven until the butter melts.
  4. In a medium bowl, combine the self-rising flour, salt, cinnamon, 1 cup of sugar, milk, and vanilla extract. Stir the mixture until well combined.
  5. Remove the skillet from the oven (once the butter has melted) and pour the batter into the skillet.
  6. Sprinkle the fresh blackberries evenly over the prepared batter in the skillet.
  7. Bake in the preheated oven at 375 degrees for approximately 30 minutes or until the crust turns golden brown.
  8. Serve the cobbler warm. Optionally, garnish with a scoop of vanilla ice cream.
