  • 1 cup (90g) old-fashioned oats
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ tsp ground cinnamon
  • ½ cup (90g) semisweet chocolate chips
  • ½ cup (90g) white chocolate chips
  • ½ cup (60g) chopped nuts (optional

Instructions

  1. Brown the Butter:
    • In a large saucepan, melt the butter over low-medium heat until foamy. Stir constantly and cook until golden brown and nutty, about 5–7 minutes. Remove from heat and let cool for 2–3 minutes.
  2. Combine Butter and Sugars:
    • In a large mixing bowl, whisk together the browned butter, brown sugar, and granulated sugar until smooth. Refrigerate the mixture for 10–15 minutes to cool.
  3. Mix Wet Ingredients:
    • Add the egg, egg yolk, and vanilla extract to the cooled butter-sugar mixture. Whisk until fully combined.
  4. Prepare Dry Ingredients:
    • In a separate bowl, sift together the flour, oats, baking soda, salt, and cinnamon.
  5. Combine Wet and Dry Ingredients:
    • Gradually add half the dry mixture to the wet ingredients, stirring gently. Add the remaining dry ingredients, chocolate chips, and nuts (if using), and mix until just combined.
  6. Chill the Dough:
    • Roll the dough into 2-tablespoon-sized balls and place them on a parchment-lined baking sheet. Cover and chill for 30 minutes.
  7. Bake the Cookies:
    • Preheat the oven to 325°F (160°C) and line another baking sheet with parchment paper. Arrange the chilled dough balls on the baking sheet, leaving 2 inches of space between each. Bake for 10–12 minutes until the edges are golden brown.
