Ingredients
  

  • 2 cups apples, peeled and sliced
  • 1 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 0.5 cup unsalted butter, melted
  • 16 oz cream cheese, softened (2 packages of 8 oz each)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine sliced apples, granulated sugar, and cinnamon. Toss to coat.
  3. In another bowl, mix flour, oats, and melted butter until crumbly. Reserve some for topping.
  4. Press the mixture into the bottom of a greased springform pan to form the crust.
  5. Layer the apple mixture over the crust.
  6. In a large bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Add eggs, one at a time, beating after each addition.
  7. Pour the cream cheese mixture over the apples and crust.
  8. Sprinkle reserved crumb mixture on top.
  9. Bake for 45–50 minutes or until set.
  10. Let it cool before releasing the springform pan.

Notes

For extra flavor, use a mix of sweet and tart apples. Chill the cheesecake before serving for cleaner slices. Serve with a drizzle of caramel sauce or a dollop of whipped cream for a decadent touch.
