- Preheat oven to 350°F (175°C). In a bowl, mix sliced apples with lemon juice, sugars, cornstarch, cinnamon, nutmeg, and water.
- Cream chilled butter in another bowl; add flour, salt, and sugar until crumbly. Gradually mix in ice water to form dough.
- Roll out half the dough on a floured surface and cut into circles.
- Place apple filling and caramel in each circle's center. Fold over and seal edges.
- Arrange on a baking sheet; brush tops with egg wash and sprinkle with cinnamon sugar.
- Bake for 20 minutes or until golden brown.
Notes
For extra texture, sprinkle coarse sugar on top before baking. You can drizzle more caramel after baking for a bakery-style finish. Best served warm with a scoop of vanilla ice cream.
