Baked Cod with Lemon and Garlic

Ingredients
  

  • 8 fillets cod fillets about 4 oz each, thawed if frozen
  • 0.25 cup unsalted butter melted
  • 1 medium lemon juiced and zested
  • 0.5 tsp garlic powder
  • 0.75 tsp sea salt
  • 0.25 tsp black pepper
  • 1 tbsp fresh parsley chopped, for garnish

Method
 

  1. Preheat the oven to 400°F (204°C) and lightly grease a 9×13-inch baking dish.
  2. Pat the cod fillets dry with paper towels and arrange them in a single layer in the baking dish.
  3. Melt the butter and stir in the lemon juice, lemon zest, garlic powder, salt, and black pepper.
  4. Brush the lemon butter mixture generously over both sides of each cod fillet.
  5. Bake for 12–15 minutes, until the fish is opaque, flakes easily with a fork, and reaches an internal temperature of about 135–140°F (57–60°C).
  6. Remove from the oven, sprinkle with fresh parsley, and serve immediately.

Notes

For extra flavor, add sliced lemon rounds on top before baking. Serve with roasted vegetables, rice, or a fresh green salad.
