  • 0.5 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 ripe bananas, mashed use 3 for stronger flavor
  • 1 cup all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.5 teaspoon cinnamon optional
  • 0.25 teaspoon salt
  • 0.5 cup optional mix-ins: walnuts, pecans, or chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line or grease an 8×8-inch baking pan.
  2. Whisk together melted butter and brown sugar until smooth. Add egg and vanilla, then stir in mashed bananas.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  4. Combine dry ingredients with the banana mixture, mixing just until combined. Fold in any optional mix-ins.
  5. Spread batter evenly into the prepared pan and bake for 25–30 minutes, until edges are golden and a toothpick comes out mostly clean.
  6. Let cool for 15–20 minutes before slicing into squares.

Notes

For extra moisture and flavor, use three bananas instead of two. Add chocolate chips or nuts for tasty texture variations.
