Ingredients
  

Crust
  • 2 cups vanilla wafer cookies, finely crushed
  • 0.33 cup unsalted butter, melted
Cheesecake Layer
  • 16 oz cream cheese, softened
  • 0.67 cup granulated sugar
  • 2 large eggs
  • 2 medium ripe bananas, mashed
Pudding Layer
  • 3.4 oz instant banana pudding mix
  • 1 cup cold milk
  • 1 cup whipped topping

Method
 

  1. Preheat oven to 325°F (163°C). Line a 9×9-inch baking dish with parchment paper.
  2. Mix crushed vanilla wafer cookies and melted butter until combined. Press evenly into the bottom of the baking dish to form the crust.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
  4. Stir in mashed bananas, then spread the cream cheese mixture evenly over the crust.
  5. In another bowl, whisk banana pudding mix and cold milk for 2 minutes. Let it thicken, then gently spread over the cheesecake layer.
  6. Bake for 40 minutes or until the center is set. Cool completely, then refrigerate for at least 2 hours. Top with whipped topping before slicing into squares.

Notes

For firmer squares, chill overnight before cutting. Add fresh banana slices on top just before serving for extra flavor.
