- Preheat oven to 325°F (163°C). Line a 9×9-inch baking dish with parchment paper.
- Mix crushed vanilla wafer cookies and melted butter until combined. Press evenly into the bottom of the baking dish to form the crust.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
- Stir in mashed bananas, then spread the cream cheese mixture evenly over the crust.
- In another bowl, whisk banana pudding mix and cold milk for 2 minutes. Let it thicken, then gently spread over the cheesecake layer.
- Bake for 40 minutes or until the center is set. Cool completely, then refrigerate for at least 2 hours. Top with whipped topping before slicing into squares.
Notes
For firmer squares, chill overnight before cutting. Add fresh banana slices on top just before serving for extra flavor.
