Ingredients
  

Cheesecake Filling
  • 1 cup cookie butter
  • 2 cups cream cheese softened
  • 1 cup powdered sugar
  • 2 ripe bananas mashed
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
Layers & Topping
  • 1 cup vanilla wafer cookies crushed
  • 1/2 cup bananas sliced, for topping

Method
 

  1. In a large mixing bowl, beat the cookie butter and cream cheese together until smooth and creamy.
  2. Add the powdered sugar, mashed bananas, and vanilla extract. Mix until fully combined.
  3. In a separate bowl, whip the heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the cookie butter mixture until light and fluffy.
  5. Spread a layer of crushed vanilla wafers evenly over the bottom of the pan.
  6. Spread half of the cheesecake mixture over the wafer layer.
  7. Add another layer of crushed wafers, followed by the remaining cheesecake mixture.
  8. Cover and refrigerate for at least 4 hours, or overnight, until set.
  9. Top with sliced bananas just before serving. Slice and enjoy.

Notes

For best results, add the banana topping right before serving to prevent browning. A drizzle of warmed cookie butter makes a delicious finishing touch.
