Ingredients

  • 4 cups Rice Krispies cereal
  • 1 cup mini marshmallows
  • 1 cup banana-flavored pudding mix (instant)
  • 1/2 cup unsalted butter (1 stick)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup sliced bananas (fresh or dried)
  • 1/2 cup whipped topping (optional, for creamier texture)
  • additional banana slices for garnish (optional)

Equipment

  • large saucepan
  • Wooden spoon or spatula
  • 9×9-inch baking dish
  • Parchment paper optional for lining pan
  • knife for slicing treats

Method

  1. In a large saucepan, melt the butter over low heat. Add the mini marshmallows and stir until melted and smooth.
  2. Stir in the banana pudding mix, vanilla extract, and salt until smooth and combined.
  3. Remove from heat and add the Rice Krispies cereal. Stir until evenly coated.
  4. Gently fold in sliced bananas (and whipped topping, if using) until incorporated.
  5. Grease or line a 9x9-inch baking dish. Press mixture evenly into the pan with a greased spatula or hands.
  6. Let cool for 30 minutes at room temperature until set. Cut into squares or rectangles.
  7. Top with extra banana slices or whipped topping before serving, if desired.

Notes

Use dried bananas if you want longer shelf life, as fresh bananas shorten storage time. Store in an airtight container for up to 2 days at room temperature or refrigerate for a firmer texture. For extra indulgence, drizzle melted white chocolate on top.
