Ingredients
  

  • 1 lb boneless, skinless chicken breasts or thighs cut into bite-sized pieces
  • 1/2 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil or vegetable oil
  • 1/2 cup mayonnaise
  • 3 tbsp sweet chili sauce
  • 1–2 tsp sriracha adjust to taste
  • 1 tsp honey
  • 1 tsp rice vinegar or lime juice
  • 2 cups cooked white or brown rice
  • 1 cup shredded carrots
  • 1 cup sliced cucumber
  • 1 cup shredded cabbage or lettuce
  • 2 green onions sliced
  • sesame seeds for garnish
  • fresh cilantro for garnish

Method
 

  1. Toss chicken pieces with flour, salt, and pepper until evenly coated.
  2. Heat oil in a large skillet over medium-high heat. Cook chicken for 5–7 minutes, turning occasionally, until golden brown and cooked through. Remove from heat.
  3. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar until smooth. Adjust heat to taste.
  4. Divide cooked rice among serving bowls.
  5. Top rice with carrots, cucumber, cabbage or lettuce, and crispy chicken.
  6. Drizzle generously with Bang Bang sauce and garnish with green onions, sesame seeds, and fresh cilantro before serving.

Notes

Swap rice for cauliflower rice for a lighter option, or use air-fried chicken for extra crispiness with less oil.
