- In a large mixing bowl, combine the rolled oats, softened cream cheese, Greek yogurt, protein powder, honey or maple syrup, vanilla extract, and salt. Mix until fully combined.
- Gently fold in the fresh blueberries, being careful not to mash them.
- Scoop about one tablespoon of the mixture and roll it into a ball. Place on a parchment-lined baking sheet and repeat with the remaining mixture.
- Refrigerate the protein bites for 30 to 60 minutes, or until firm.
- Once chilled, serve immediately or store in an airtight container in the refrigerator.
Notes
If the mixture feels too soft, add an extra tablespoon of oats or protein powder. These bites keep well in the fridge for up to 4 days.
