Method
- Preheat your oven to 375°F (190°C) and gather all your ingredients. This recipe moves quickly once started.
- Pat the chicken breasts dry and season both sides generously with salt and pepper.
- In a medium saucepan, combine blueberries, balsamic vinegar, honey, and thyme over medium heat. Gently smash blueberries as they cook, forming a chunky sauce (about 5 minutes).
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken 2–3 minutes per side until golden brown.
- Pour the blueberry sauce over the seared chicken in the skillet. It should sizzle as the flavors blend.
- Transfer skillet to the oven and bake for 20–25 minutes, or until the chicken reaches 165°F (74°C) internally.
- Let the chicken rest for 3 minutes before serving. Drizzle extra sauce over top and garnish with fresh thyme and blueberries.
Notes
Serve this elegant dish with roasted potatoes, wild rice, or a crisp green salad. You can substitute maple syrup for honey for a deeper sweetness. For an extra glossy sauce, stir in a teaspoon of butter at the end of cooking.
