Ingredients
  

  • 4 cups sweet potatoes mashed
  • 1 cup brown sugar
  • 1/2 cup milk
  • 1/4 cup butter melted
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 cup pecans chopped
  • 1/2 cup mini marshmallows optional

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine mashed sweet potatoes, brown sugar, milk, melted butter, eggs, vanilla extract, and cinnamon. Mix until smooth and well combined.
  3. Pour the sweet potato mixture into a greased baking dish.
  4. In a separate bowl, mix chopped pecans with a little brown sugar and sprinkle over the sweet potato mixture. Add mini marshmallows on top if desired.
  5. Bake for 30-35 minutes, or until heated through and golden on top. Let cool slightly before serving.

Notes

For extra flavor, toast the pecans lightly before sprinkling them on top. This casserole can be prepared a day ahead and baked just before serving.
