Method
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine mashed sweet potatoes, brown sugar, milk, melted butter, eggs, vanilla extract, and cinnamon. Mix until smooth and well combined.
- Pour the sweet potato mixture into a greased baking dish.
- In a separate bowl, mix chopped pecans with a little brown sugar and sprinkle over the sweet potato mixture. Add mini marshmallows on top if desired.
- Bake for 30-35 minutes, or until heated through and golden on top. Let cool slightly before serving.
Notes
For extra flavor, toast the pecans lightly before sprinkling them on top. This casserole can be prepared a day ahead and baked just before serving.
