Ingredients

Filling
  • 1 can refrigerated biscuits 8-count, not flaky
  • 4 ounces cream cheese room temperature
  • 1/4 cup buffalo sauce
  • 2 cups rotisserie chicken, shredded
  • 1/4 cup sharp cheddar cheese, shredded
  • 1/4 cup mozzarella cheese, shredded
  • 1 teaspoon green onion, finely diced
Toppings
  • 3 tablespoons buffalo sauce divided
  • 1 teaspoon green onion, finely diced for garnish
  • blue cheese or ranch dressing for dipping

Method

  1. In a mixing bowl, whisk together cream cheese and buffalo sauce until smooth. Add chicken, cheddar, mozzarella, and green onion. Stir until combined; you should have about 2 ½ cups of filling.
  2. Preheat the oven to 375°F (190°C) and spray a 10-inch oven-safe skillet with nonstick spray.
  3. Place biscuits on a clean surface and flatten each to ⅛-inch thickness using a rolling pin.
  4. Divide filling among biscuits (about ¼ cup each). Pinch edges to seal and place seam-side down in the skillet. Brush tops with about 2 tablespoons of buffalo sauce; reserve the rest.
  5. Bake 24–26 minutes, or until golden brown. Drizzle with remaining buffalo sauce and garnish with green onions.
  6. Serve warm with ranch or blue cheese dressing and extra buffalo sauce for dipping.

Notes

For extra heat, add a pinch of cayenne or diced jalapeños to the filling. These reheat well in an air fryer at 350°F for 3–4 minutes.
