  • 1 cup unsalted butter, melted
  • 1 1/2 cups packed brown sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1 cup butterscotch baking chips
  • 3/4 cup toffee bits

Method
 

  1. Preheat oven to 350°F (177°C). Line a 9×13-inch baking pan with parchment paper, letting the edges overhang for easy removal.
  2. In a large mixing bowl, whisk the melted butter with the brown sugar until smooth and glossy.
  3. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Sift the flour, baking powder, and salt over the wet ingredients, then fold gently until combined. Do not overmix.
  5. Stir in the butterscotch chips and toffee bits until evenly distributed.
  6. Spread the batter evenly into the prepared pan and smooth the top. Bake for 25–30 minutes, until golden at the edges and just set in the center.
  7. Cool completely in the pan. Lift out using the parchment overhang and cut into squares.

Notes

For extra flavor, sprinkle a pinch of flaky sea salt on top before baking. These bars freeze beautifully — just wrap tightly and store for up to 2 months. Warm slightly before serving for gooey texture.
