Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup ricotta cheese
  • 1/4 cup powdered sugar
  • 1/4 tsp cinnamon
  • 1/2 cup mini chocolate chips
  • 1/4 cup granulated sugar (for rolling)
  • 1 tsp cinnamon (for rolling)

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together flour, baking powder, and salt in a medium bowl.
  3. Cream butter and sugar until light and fluffy, then beat in the egg and vanilla.
  4. Add dry ingredients to wet ingredients and mix until just combined.
  5. Mix ricotta, powdered sugar, cinnamon, and mini chocolate chips in a separate bowl.
  6. Roll dough into 1-inch balls, then roll in cinnamon-sugar mixture.
  7. Place balls on baking sheet and flatten slightly with the bottom of a glass.
  8. Bake for 10–12 minutes, until edges are lightly golden.
  9. Cool on baking sheet for 5 minutes, then transfer to a wire rack.
  10. Spread a teaspoon of ricotta filling on one cookie and sandwich with another.

Notes

For best results, drain the ricotta if it is too wet. Chill the filling for easier spreading. Store cookies in the refrigerator due to the ricotta filling.
