- Preheat oven to 350°F (175°C). Melt butter and let it cool slightly while preparing ingredients.
- In a large mixing bowl, whisk together melted butter and sugar until smooth and glossy, about 2 minutes.
- Add eggs one at a time, whisking well after each addition until mixture is smooth and thickened.
- Stir in vanilla extract until evenly incorporated.
- In a separate bowl, sift together flour and baking powder. Fold into wet ingredients until just combined; do not overmix.
- Gently fold in chopped apples until evenly distributed.
- Pour batter into greased 8×8 inch pan and spread evenly.
- Bake 30–35 minutes until golden brown and a toothpick comes out clean.
- Drizzle warm blondies with caramel sauce and let cool 10 minutes before serving.
Notes
Try adding a sprinkle of sea salt over the caramel for a salted caramel twist. Use tart apples like Granny Smith for balance. Store leftovers in an airtight container for up to 3 days.
