Ingredients
  

  • 1 cup unsalted butter, melted
  • 1.5 cups granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2.5 cups all-purpose flour
  • 1 tsp baking powder
  • 3 crisp apples, peeled and chopped
  • 1/2 cup caramel sauce (plus extra for drizzling)

Method
 

  1. Preheat oven to 350°F (175°C). Melt butter and let it cool slightly while preparing ingredients.
  2. In a large mixing bowl, whisk together melted butter and sugar until smooth and glossy, about 2 minutes.
  3. Add eggs one at a time, whisking well after each addition until mixture is smooth and thickened.
  4. Stir in vanilla extract until evenly incorporated.
  5. In a separate bowl, sift together flour and baking powder. Fold into wet ingredients until just combined; do not overmix.
  6. Gently fold in chopped apples until evenly distributed.
  7. Pour batter into greased 8×8 inch pan and spread evenly.
  8. Bake 30–35 minutes until golden brown and a toothpick comes out clean.
  9. Drizzle warm blondies with caramel sauce and let cool 10 minutes before serving.

Notes

Try adding a sprinkle of sea salt over the caramel for a salted caramel twist. Use tart apples like Granny Smith for balance. Store leftovers in an airtight container for up to 3 days.
