Ingredients
  

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar (for crust)
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar (for filling)
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1/4 cup caramel sauce (for filling)
  • 3 medium apples, peeled, cored, thinly sliced
  • 2 tbsp unsalted butter
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup caramel sauce (for topping)
  • 1/4 cup chopped pecans (optional)

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter. Press into pan bottom. Bake 10 minutes, then cool.
  3. Beat cream cheese until smooth. Add sugar and vanilla; mix well. Add eggs one at a time. Mix in sour cream and caramel sauce.
  4. Pour filling over crust. Bake 60–70 minutes until center is set. Cool in oven 1 hour with door ajar, then refrigerate 4+ hours.
  5. In a skillet, melt butter. Add apples, brown sugar, cinnamon, and nutmeg. Cook 10 minutes until tender and caramelized. Cool slightly.
  6. Top chilled cheesecake with apples, drizzle caramel sauce, and sprinkle pecans if using.

Notes

For extra flavor, toast the pecans before sprinkling them on top. Make sure the cheesecake is fully chilled before adding toppings for best texture and presentation.
