- Preheat oven to 350°F (175°C) and allow to preheat fully.
- Heat a large nonstick skillet over medium-high heat. Add ground beef and diced onion, breaking up the beef as it cooks. Sauté until beef is browned and onions are softened, about 7–8 minutes.
- Stir in chopped garlic, cheddar soup, cream of mushroom soup, 0.5 cup milk, salt, and pepper. Mix until smooth and fully blended. Add 1 cup shredded cheddar cheese and stir until melted. Remove from heat.
- Lightly coat a 9×13-inch baking dish with cooking spray. Spread beef mixture evenly in the dish and top with remaining 1 cup shredded cheddar cheese.
- Empty Cheddar Bay Biscuit mix into a large bowl (reserve seasoning packet). Add 1 cup shredded cheddar and 2 cups milk; stir until batter is smooth and lump-free.
- Pour the biscuit batter evenly over the beef layer. Bake for 50–55 minutes, until the topping is golden brown and fully baked through.
- Mix melted butter with the reserved Cheddar Bay Biscuit seasoning packet until combined.
- Remove casserole from the oven and immediately brush the hot biscuit topping with the butter-seasoning mixture. Let stand 5 minutes, then garnish with fresh parsley before serving.
Notes
For extra flavor, add a pinch of cayenne or Worcestershire sauce to the beef mixture. You can substitute ground turkey for a lighter option. Serve with a side salad or steamed green beans for a complete meal.
