Ingredients
  

  • 1 pound ground beef
  • 9 ounces cheese tortellini
  • 10 ounces enchilada sauce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 0.5 cup diced onion
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • salt and pepper to taste

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté the diced onion until translucent.
  3. Add the ground beef to the skillet and cook until browned. Drain excess fat.
  4. Stir in the enchilada sauce, garlic powder, cumin, salt, and pepper. Simmer for 5 minutes.
  5. Meanwhile, cook the tortellini according to package instructions; drain well.
  6. In a large mixing bowl, combine the cooked tortellini with the beef mixture.
  7. Transfer the mixture to a greased baking dish and top with shredded cheese.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
  9. Let cool for a few minutes before serving.

Notes

Use ground turkey or chicken for a lighter version. Add black beans, corn, or jalapeños for extra flavor and texture. For a creamier result, stir in a little sour cream before baking. Serve with a sprinkle of cilantro or a dollop of guacamole.
