- Bring a large pot of salted water to a boil. Cook the rotini until al dente according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Season chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Cook for 6–7 minutes until browned and cooked through. Remove and set aside.
- In the same skillet, melt butter. Add minced garlic and sauté for 1 minute until fragrant.
- Pour in chicken broth and heavy cream. Bring to a gentle simmer, then stir in mozzarella, Parmesan, and cheddar until smooth and melted.
- Add cooked rotini and chicken back to the skillet. Toss to coat evenly and simmer for 2–3 minutes.
- Garnish with fresh parsley and serve hot.
Notes
Adjust Cajun seasoning to control heat level. For a thinner sauce, add a splash of reserved pasta water. Freshly grated cheese melts more smoothly than pre-shredded.
