Ingredients
  

  • 2 boneless skinless chicken breasts, cubed
  • 12 oz rotini pasta
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • salt and black pepper, to taste
  • 4 cloves garlic, minced
  • 1 tbsp butter
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • fresh parsley, chopped (for garnish)

Method
 

  1. Bring a large pot of salted water to a boil. Cook the rotini until al dente according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Cook for 6–7 minutes until browned and cooked through. Remove and set aside.
  3. In the same skillet, melt butter. Add minced garlic and sauté for 1 minute until fragrant.
  4. Pour in chicken broth and heavy cream. Bring to a gentle simmer, then stir in mozzarella, Parmesan, and cheddar until smooth and melted.
  5. Add cooked rotini and chicken back to the skillet. Toss to coat evenly and simmer for 2–3 minutes.
  6. Garnish with fresh parsley and serve hot.

Notes

Adjust Cajun seasoning to control heat level. For a thinner sauce, add a splash of reserved pasta water. Freshly grated cheese melts more smoothly than pre-shredded.
