  • 6 cups shredded chicken (use leftover rotisserie chicken)
  • 16 oz spaghetti (or substitute with penne or fettuccine)
  • 4 cups creamy sauce (homemade or vegan)
  • 2 cups cheddar cheese (or mozzarella)
  • 1 cup Parmesan cheese (optional but recommended)
  • 8 oz cream cheese (optional for extra creaminess)
  • 4 cloves garlic, minced (optional)
  • salt and pepper to taste

Method
 

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish and gather all ingredients.
  2. Bring a large pot of salted water to a boil. Cook spaghetti according to package directions until al dente (8–10 minutes). Drain and set aside.
  3. In a medium saucepan, combine shredded chicken, cooked spaghetti, and creamy sauce over medium heat. Stir for about 5 minutes until everything is coated and heated through.
  4. Pour the mixture into the greased baking dish. Sprinkle shredded cheddar and Parmesan evenly on top.
  5. Bake for 25–30 minutes, or until the edges are bubbling and the top is golden.
  6. Let the casserole cool for 5–10 minutes before serving to help it set.

Notes

Add diced bell peppers or mushrooms for extra texture and flavor. Adjust seasoning to taste with Italian herbs or crushed red pepper flakes. Great as leftovers for lunch or next-day dinner.
