Cheesy Ground Beef and Potatoes

Ingredients
  

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • 1 cup shredded cheddar cheese
  • 1/2 cup beef broth
  • 1 tbsp fresh parsley, chopped

Method
 

  1. Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
  2. Add the chopped onion and minced garlic to the skillet. Cook for 3-4 minutes, or until the onion is softened and fragrant.
  3. Add the diced potatoes to the skillet and season with salt, pepper, paprika, and dried oregano. Stir to combine.
  4. Pour in the beef broth and cover the skillet. Reduce the heat to low and cook for 20-25 minutes, or until the potatoes are tender and the liquid has mostly absorbed.
  5. Sprinkle the shredded cheddar cheese over the beef and potatoes. Cover again and cook for 2-3 minutes, or until the cheese has melted.
  6. Garnish with freshly chopped parsley before serving.

Notes

Swap cheddar with pepper jack or mozzarella for a different flavor. Add diced bell peppers or mushrooms for extra veggies. For a spicier version, sprinkle in chili flakes or cayenne pepper.
