Ingredients
  

  • 32 oz frozen shredded hash browns, thawed
  • 1 can (10.25 oz) cream of chicken or cheddar soup
  • 1 pint sour cream
  • 1/2 cup melted butter
  • 1/2 cup finely chopped onion
  • 2 cups grated Colby cheese
  • 1/4 tsp pepper

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. In a large bowl, mix hash browns, melted butter, soup, sour cream, onion, 1.5 cups cheese, and pepper.
  3. Spread the mixture in the baking dish and top with the remaining cheese.
  4. Bake for 45-50 minutes until golden and bubbly.

Notes

Make it ahead by assembling the casserole and refrigerating overnight. For extra crunch, top with crushed cornflakes or buttery breadcrumbs before baking. You can swap Colby with cheddar or Monterey Jack for a different flavor.
