Method
- Preheat your oven to 400°F (200°C).
- Wash and cut the baby potatoes into halves or quarters.
- Slice the smoked sausage into 1/4-inch thick rounds.
- In a small bowl, mix together the ranch seasoning, garlic powder, onion powder, and black pepper.
- Place the potatoes in a large bowl. Drizzle with olive oil and sprinkle with half of the seasoning mixture. Toss to coat evenly.
- Line a baking sheet with parchment paper or lightly grease it.
- Spread the seasoned potatoes evenly across the baking sheet.
- Scatter the sliced smoked sausage over the potatoes.
- Roast for 35–40 minutes or until potatoes are golden and tender, stirring halfway through.
- Remove from the oven and sprinkle shredded cheddar cheese over the top. Return to the oven for 5 minutes until melted and bubbly.
Notes
Try swapping cheddar for pepper jack or Monterey Jack for a different flavor. For added heat, sprinkle chili flakes before roasting.
