Chicken Alfredo Lasagna Roll-Ups

Ingredients
  

  • 12 lasagna noodles, cooked al dente according to package directions
  • 15 oz (425 g) Alfredo sauce (about 1 jar)
  • 4 cups shredded cooked chicken
  • 2 cups shredded mozzarella cheese, divided
  • ½ cup grated Parmesan cheese, divided
  • 1 tsp garlic powder
  • ½ tsp lemon zest
  • ½ tsp dried Italian seasoning
  • Fresh parsley, chopped (for garnish)

Equipment

  • Large pot for noodles
  • 9x13-inch baking dish
  • Mixing bowls
  • Wooden spoon or spatula
  • Aluminum foil

Method
 

  1. Preheat & Prep PanPreheat oven to 350°F (177°C). Spray a 9×13-inch baking dish with nonstick spray. Spread a thin layer of Alfredo sauce on the bottom.
  2. Cook NoodlesCook lasagna noodles until al dente. Drain, rinse under cold water, and lay flat on a clean surface. Pat dry with paper towels.
  3. Make FillingIn a large bowl, mix half the Alfredo sauce, shredded chicken, ½ cup mozzarella, ¼ cup Parmesan, garlic powder, lemon zest, and Italian seasoning
  4. Assemble Roll-UpsSpread the chicken mixture evenly over each noodle, then roll tightly. Place seam-side down in the baking dish.
  5. Top & BakePour remaining Alfredo sauce over the rolls. Sprinkle with remaining mozzarella and Parmesan. Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes.
  6. Optional CrispBroil for 2–3 minutes for golden, bubbly cheese.
  7. ServeGarnish with fresh parsley and serve warm.

Notes

  • Rotisserie chicken is a huge time-saver.
  • For extra saucy pasta, add more Alfredo sauce before baking.
