Ingredients
  

  • 2 large boneless, skinless chicken breasts cut into 4 thin cutlets
  • 2 tablespoons olive oil divided
  • 3 cloves garlic minced
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups fresh spinach
  • 8 ounces cream cheese softened
  • 1 cup shredded mozzarella cheese divided
  • 1/2 cup Parmeson cheese optional

Method
 

  1. Preheat oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
  2. Slice chicken breasts horizontally to create four thin cutlets and pound thicker ends for even thickness.
  3. Whisk together 1 tablespoon olive oil, garlic, Italian seasoning, salt, and pepper. Toss chicken in the mixture, cover, and refrigerate 15–30 minutes.
  4. Heat remaining olive oil in a skillet over medium heat. Add spinach and cook 2–3 minutes until wilted. Set aside.
  5. Beat softened cream cheese, then stir in wilted spinach, 1/2 cup mozzarella, and Parmesan if using.
  6. Optional: Sear the marinated chicken in a hot skillet 1–2 minutes per side for extra flavor.
  7. Arrange chicken in the baking dish. Spread the cream cheese-spinach mixture over each piece and top with remaining mozzarella.
  8. Bake 20–30 minutes, or until chicken reaches 165°F (75°C) and cheese is melted and lightly browned.
  9. Let rest 5 minutes before serving.

Notes

Serve with rice, pasta, or roasted vegetables. Add sun-dried tomatoes or mushrooms for extra flavor.
