Ingredients
Method
- Preheat oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
- Slice chicken breasts horizontally to create four thin cutlets and pound thicker ends for even thickness.
- Whisk together 1 tablespoon olive oil, garlic, Italian seasoning, salt, and pepper. Toss chicken in the mixture, cover, and refrigerate 15–30 minutes.
- Heat remaining olive oil in a skillet over medium heat. Add spinach and cook 2–3 minutes until wilted. Set aside.
- Beat softened cream cheese, then stir in wilted spinach, 1/2 cup mozzarella, and Parmesan if using.
- Optional: Sear the marinated chicken in a hot skillet 1–2 minutes per side for extra flavor.
- Arrange chicken in the baking dish. Spread the cream cheese-spinach mixture over each piece and top with remaining mozzarella.
- Bake 20–30 minutes, or until chicken reaches 165°F (75°C) and cheese is melted and lightly browned.
- Let rest 5 minutes before serving.
Notes
