  • 3 cups cooked chicken, shredded
  • 1 cup chicken broth
  • 10.5 oz can cream of chicken soup
  • 1 package (6 oz) stuffing mix
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 cup shredded cheddar cheese (optional)
  • fresh parsley for garnish (optional)

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine shredded chicken, chicken broth, cream of chicken soup, mixed vegetables, garlic powder, onion powder, and black pepper. Stir until well combined.
  3. Pour the chicken mixture into a greased 9x13 inch baking dish, spreading it out evenly.
  4. In a separate bowl, prepare the stuffing mix according to package instructions. Spoon it generously over the chicken mixture.
  5. If desired, sprinkle shredded cheddar cheese over the stuffing for extra flavor.
  6. Bake in the preheated oven for 25-30 minutes, until hot and bubbly and the stuffing is golden brown.
  7. Remove from oven, let cool slightly, and garnish with fresh parsley before serving.

Notes

Use rotisserie chicken for convenience. You can swap cream of chicken soup with cream of mushroom or cream of celery. For a lighter version, use reduced-sodium broth and low-fat soup. Make it extra hearty with sautéed mushrooms or more vegetables.
