  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup frozen mixed vegetables (peas, carrots, and corn)
  • 10.5 oz can cream of chicken soup
  • 1 cup milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 0.25 cup unsalted butter, melted
  • 0.75 cup shredded cheddar cheese
  • 0.5 cup buttermilk

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the chicken pieces until browned and cooked through, about 5–7 minutes. Set aside.
  3. In a large mixing bowl, combine the cooked chicken, frozen mixed vegetables, cream of chicken soup, milk, garlic powder, onion powder, salt, and black pepper. Stir until well combined.
  4. Pour the chicken mixture into a greased 3-quart casserole dish, spreading it evenly.
  5. In another bowl, mix together the flour, baking powder, and melted butter. Gradually stir in the buttermilk until just combined.
  6. Spoon the biscuit mixture evenly over the chicken mixture in the casserole dish.
  7. Sprinkle shredded cheddar cheese on top of the biscuit layer.
  8. Bake in the preheated oven for 30–35 minutes, or until the biscuit topping is golden brown and cooked through.
  9. Allow the casserole to cool for a few minutes before serving.

Notes

For extra flavor, add a pinch of thyme or rosemary to the biscuit mixture. You can substitute the frozen mixed vegetables with fresh ones or your favorite medley. Leftovers reheat beautifully in the oven or air fryer for a crisp topping.
