Chicken Gloria Casserole

Ingredients
  

  • 3 boneless skinless chicken breasts, cut in half lengthwise
  • 1/3 cup all-purpose flour
  • 3 tbsp olive oil
  • 2 tbsp butter
  • 8 oz mushrooms, sliced
  • 18 oz cream of mushroom soup
  • 6 slices Swiss or Muenster cheese
  • 2 tbsp fresh parsley, chopped, for garnish
  • Kosher salt and freshly ground black pepper, to taste

  • Mixing spoon or spatula

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Season chicken with salt and pepper. Dredge each piece in flour, shaking off excess.
  3. In a large skillet over medium heat, heat olive oil. Brown chicken on both sides, then transfer to the baking dish.
  4. Add butter to the skillet. Cook mushrooms with salt and pepper until golden brown.
  5. Mix in cream of mushroom soup until heated through and well combined.
  6. Pour sauce over chicken, then top with cheese slices.
  7. Cover with foil and bake for 30 minutes.
  8. Remove foil, set oven to broil, and cook 1–2 minutes until cheese is bubbly and browned.

Notes

For a lighter version, substitute Greek yogurt or light sour cream for part of the cream of mushroom soup. You can also use mozzarella or provolone if Swiss cheese isn’t available. Serve with rice, mashed potatoes, or crusty bread to soak up the delicious sauce.
