Chicken Pillows with Creamy Parmesan Sauce

Ingredients
  

Filling
  • 2 cups Cooked shredded chicken Rotisserie chicken works well
  • 8 oz Cream cheese Softened
  • 1/4 cup Chopped green onions Chives can be substituted
  • 1 tsp Salt Adjust to taste
  • 1 tsp Black pepper Adjust to taste
  • 2 cans Refrigerated crescent rolls Gluten-free if needed
  • 4 tbsp Butter Melted
  • 1 cup Italian-seasoned breadcrumbs Can use plain breadcrumbs with Italian herbs
Creamy Parmesan Sauce
  • 2 tbsp Butter Melt gently
  • 2 tbsp All-purpose flour Gluten-free flour can be used
  • 1 cup Chicken broth Low-sodium preferred
  • 1 cup Milk Half and half for a richer sauce
  • 1/2 cup Grated Parmesan cheese Freshly grated recommended
  • 1 tsp Salt Adjust to taste
  • 1 tsp Black pepper Adjust to taste

Method
 

  1. Preheat the oven to 375°F (190°C) and grease a large baking sheet with nonstick spray.
  2. In a mixing bowl, combine shredded chicken, cream cheese, green onions, salt, and pepper until well mixed.
  3. Unroll the crescent dough and separate into triangles.
  4. Place about one tablespoon of chicken filling on the wide end of each triangle and roll toward the point.
  5. Dip each roll in melted butter, then coat with Italian-seasoned breadcrumbs.
  6. Arrange on the prepared baking sheet and bake for 20–25 minutes, until golden brown.
  7. Meanwhile, melt butter in a saucepan over medium heat. Whisk in flour to form a roux.
  8. Gradually whisk in chicken broth and milk. Cook until thickened.
  9. Stir in Parmesan cheese, then season with salt and pepper to taste.
  10. Allow the Chicken Pillows to rest briefly, then serve warm with the creamy Parmesan sauce.

Notes

For extra flavor, add garlic powder or Italian seasoning to the chicken filling. Leftovers reheat well in the oven to maintain crispness.
