Method
- In a large pot, heat olive oil over medium heat. Add sliced chicken sausage and cook for 5–7 minutes until browned.
- Add the minced garlic and cook for 1 minute until fragrant.
- Stir in broccoli florets and cook for 2–3 minutes until slightly softened.
- Add orzo, chicken broth, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat to a simmer.
- Cover and cook for 10–12 minutes, stirring occasionally, until orzo is tender and most liquid is absorbed.
- Remove from heat and stir in grated Parmesan until melted and creamy.
- Serve hot, garnished with fresh parsley.
Notes
For extra creaminess, stir in 1–2 tablespoons of cream or a bit more Parmesan. You can also swap broccoli for spinach or peas.
