  • 2 cups orzo pasta
  • 1 tablespoon olive oil
  • 1 pound chicken sausage, sliced
  • 2 cups broccoli florets
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped for garnish

Method
 

  1. In a large pot, heat olive oil over medium heat. Add sliced chicken sausage and cook for 5–7 minutes until browned.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Stir in broccoli florets and cook for 2–3 minutes until slightly softened.
  4. Add orzo, chicken broth, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat to a simmer.
  5. Cover and cook for 10–12 minutes, stirring occasionally, until orzo is tender and most liquid is absorbed.
  6. Remove from heat and stir in grated Parmesan until melted and creamy.
  7. Serve hot, garnished with fresh parsley.

Notes

For extra creaminess, stir in 1–2 tablespoons of cream or a bit more Parmesan. You can also swap broccoli for spinach or peas.
