- In a mixing bowl, beat the softened cream cheese, powdered sugar, brown sugar, and vanilla extract until smooth and creamy, about 2–3 minutes.
- Fold in the mini chocolate chips and chopped nuts (if using) with a spatula until evenly distributed.
- Shape the mixture into a ball using your hands. Lightly wet hands if needed to prevent sticking.
- Wrap the cheese ball tightly in plastic wrap and refrigerate for 1–2 hours, or until firm.
- Unwrap the chilled cheese ball and roll it in chocolate sprinkles until fully coated.
- Transfer to a serving platter and serve with graham crackers, pretzels, apple slices, or other dippers.
Notes
This cheese ball can be made a day ahead and kept refrigerated until serving. Let it sit at room temperature for 10 minutes before serving for easier spreading.
