Ingredients
  

  • 1 cup unsalted butter, melted
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1 1/2 cups heavy whipping cream
  • 1 cup semi-sweet chocolate chips
  • 1/2 tsp vanilla extract
  • 1/4 cup powdered sugar

Method
 

  1. Preheat oven to 350°F (175°C). Grease or line an 8x8-inch baking pan.
  2. In a large bowl, whisk together melted butter and sugar. Add eggs and vanilla extract, mixing until combined.
  3. Gently fold in flour, cocoa powder, baking powder, and salt until batter is smooth.
  4. Pour batter into pan and bake 25–28 minutes, until a toothpick comes out with moist crumbs. Cool completely.
  5. Melt chocolate chips using a double boiler or microwave, stirring until smooth. Set aside to cool slightly.
  6. In a chilled bowl, beat cream, vanilla extract, and powdered sugar until soft peaks form.
  7. Fold melted chocolate into whipped cream until smooth and fully combined.
  8. Spread mousse over cooled brownies. Refrigerate at least 2 hours until mousse is firm. Slice and serve chilled.

Notes

For best results, let the brownies cool completely before adding the mousse. These brownies are best served chilled and can be made a day in advance. Top with shaved chocolate, cocoa powder, or fresh berries for a beautiful presentation.
